Sign-up for this two-year program to be your own Winemaker! Day 1 This evening is an exploration of San Francisco and one of the City's finest restaurants to explore their wine list. A venue featured in the Top Ten favorites to be confirmed. Day 2 Our professional Winemaker will greet clients at his Winery and review the harvest process, as we proceed to his private vineyards for a morning session of Harvesting the Grapes. With direction from our winemaker, our clients will hand pick the Cabernet Sauvignon varietal, which is known as the King of Grapes. Enjoy a vineyard picnic as the harvest continues, then transfer to the processing of the grapes where clients will de-stem and then choose the right yeast strain for the fermenting process. Guests will be able to taste the "must" (freshly crushed juice) and go through the process of the "punch down" and other aspects of wine making. Celebrate with a Winemaker Dinner (as now our clients are officially Winemakers in their own right). We will bring in a private Chef to create a menu paired perfectly to the Cabernet Sauvignon varietals. Return to San Francisco. Day 3 Guests will tour two vineyards and taste barrel samples to get the "taste and feel" of other vintners blends. Enjoy a picnic with winemakers from the valley and return to San Francisco. Requires afternoon outbound. Outbound Transfer to the airport. Second Year Winemaker The Ritz-Carlton, San Francisco will again be our Winemaker's home as they return to do the "blending program" for their own varietal in year two. We will transfer our clients from San Francisco to Wine Country to meet up with their winemaker and sample their barrel of fermented wine. At this time, we will have a sit down blending program led by the vintners who will share their "secrets" of the great Bordeaux varietals, which blend several varietals together to produce their own Cabernet Sauvignon. With a pipette, we will bring in blends from Cabernet Sauvignon, Cabernet Franc, Merlot, Petite Verdot, and Malbec. Once the final blend is completed, the wine is transferred back into their barrel to gently age for another 3-6 months. We will assist with the design of their Private Label, bottling, corking and the getting the finished wine ready to ship to the clients. A Celebration of the Winemakers will take place at a private Estate in wine country. Here we will share bottle samples as well as barrel samples of wines selected. Our private chef will marry a menu designed around the wines. Return to San Francisco. Extended stay is possible. The barrel is 55 gallons, which will yield 300 bottles of finished, private labeled wine or 25 cases, to be divided among the client group. Clients will not own the barrel. Cost: Price provided upon request. Price includes 5 rooms, double occupancy for two nights in year one and two nights in year two with special upgrades and amenities, professional guidance by a renowned winemaker to completion of production of 25 cases of bottled wines, including wine, bottling, corking, labeling; 2 lunches and 2 dinners year one and 1 lunch and 1 dinner, year two; management fee; transfers between San Francisco and Wine Country.
